It was our pleasure again in the Fall of 2018 to be a part of the Junior League of Springfield MO Fall Homes Tour. It was a cool crisp Saturday morning and the smell of Fall was in the air!

Every Fall Day is a Good Day!

Apple Pecan Baked Oatmeal

  • 3 cups        Old Fashioned Oats
  • 1 cup          Light Brown Sugar
  • 1 cup          Pecan Pieces
  • 1 cup          Raisins
  • 1 1/2 tsp      Baking Powder
  • 3 tsp          Cinnamon
  • 3/4 tsp       Salt
  • 3 Large      Eggs
  • 3 cups        Milk
  • 1 1/2 tsp      Vanilla
  • 4 TBLS       Butter, Melted
  • 2                Honey Crisp Apples, Peeled and diced into small pieces
  1. Lightly grease a 9×13 glass baking dish.
  2. Preheat oven to 350.
  3. Combine oats through the salt.
  4. In a separate bowl whisk together eggs, milk, and vanilla.
  5. Stir oat mixture with milk mixture and melted butter. Mix well.
  6. Stir in Apples.
  7. Pour into prepared dish and bake for 40-50 minutes until set and oats are tender.
  8. Serve warm!

 

Streusel Top Pumpkin Bars

CRUST

  • 20 Sheets        Cinnamon Graham Crackers, Crushed
  • 1/2 cup            Sugar
  • 2 TBLS            Brown Sugar
  • 1 1/2 Sticks       Butter, Melted

FILLING

  • 24 oz.              Cream Cheese, Softened
  • 1 cup               Sugar
  • 1 1/2 tsp           Vanilla
  • 3 Large           Eggs
  • 1 cup               Solid Pack Canned Pumpkin
  • 3/4 tsp            Ground Cinnamon
  • 1 1/2 tsp           Pumpkin Pie Spice

TOPPING

  •  1 cup              Light Brown Sugar
  • 1 cup               Flour
  • 1/2 cup            Old Fashioned Oats
  • 1/2 tsp            Ground Cinnamon
  • 1/2 cup            Butter, Softened not Melted
  • 1 1/2 tsp          Vanilla
  • Caramel Sundae Syrup
  1. Preheat oven to 350.
  2. Grease 9×13 glass baking dish
  3. Combine all crust ingredients mixing until dough forms. Press into the bottom and slightly up the sides of the prepared dish.
  4. With an electric mixture beat together cream cheese, sugar, vanilla until smooth. Beat in eggs.
  5. Pour half of the cream cheese mixture onto crust.
  6. Add pumpkin, cinnamon, and pie spice to remaining cream cheese mixture.
  7. Pour gently over first layer and spread to edges.
  8. Combine topping ingredients excluding caramel and sprinkle over cream cheese mixture.
  9. Bake for 50-60 minutes until set.
  10. Cool and serve with caramel drizzle.
